I do love good Japanese knives. I would add a caveat to knives lasting a lifetime. Properly taken care of, that's quite true. But I think we've all heard a few horror stories of knives that aren't taken care of perfectly, with sad consequences. I've taken to keeping my best knives stashed, with some less expensive knives easily accessible for guests in my kitchen. As a side question. I was noticing the primary difference between a gyuuto and western chef's knife seems to be less curve in the gyuuto. And I was noticing almost all the traditional Japanese knife types seem to have very little curve. Are there some that have the same sort of curvature suited to rocking motion, or is that more of the European tradition?
10,000¥ doesn't seem too correlative for a good knife. I'll definetly be bringing back one for myself and souvenirs for my family. Thanks for the video.

I fully believe Japanese chef knives are the apex of culinary tools.
There are simple, cheap Japanese knives* as there are super-expensive ones. Japanese does not automatically mean high-priced.

Nenox knife is not very famous in Japan.I searched it in Japanese,there are Nenox factory and shops in Japan. The quality seems not bad.
